Easy Crock Pot Lasagna

Easy Crock Pot Lasagna
(sorry, no pictures...I will have to add them later)

1# Ground Beef or Chicken
1 jar spaghetti sauce
2 c. Cottage Cheese
2 c. shredded mozzarella cheese
1/2 c. shredded parmesan cheese
6 Whole lasagna noodles, regular, uncooked
1/4 c. water (I measure it into the sauce jar to rinse it good)

1. Brown ground meat. Put a small amount of sauce in the bottom of the crockpot to prevent sticking. Add water and remainder of sauce to meat. Stir until well blended.
2. Top thin layer of sauce already in crock pot with a layer of noodles, break them to fit all around.
3. Cover noodles with 1/2 cottage cheese, mozzarella and parmesan, then top cheese with meat mixture. Repeat layers with rest of ingredients.
4. Cook on low for 4 hours.

Side Note: this doubles well, I always double the recipe. Also I sometimes use only 1c. of cottage cheese and replace with 1 c. of ricotta...because I like it. You can also add mushrooms, onions, peppers...etc. You can also make it totally vege...lots of ways to tweek it! ENJOY!!

So anyway, I was reading some blogs and came across this totally cute Easter project at Stacy Makes Cents.

You’ll need a quart mason jar, Peeps in your favorite color, brown sugar, cookie crumbs, and Easter M&Ms.

Pour your crumbs down in the jar to make your first layer. Reserve about ¼ cup of the crumbs. I think this is equivalent to one sleeve of graham crackers, crushed.

Now, arrange your Peeps around the side of the jar, sitting on the crumbs. I can’t tell you how many it will take because it depends on your jar, etc. Make sure they’re facing out, so they can see the world – otherwise they’re going to get claustrophobic in there. You want them to fit pretty tight. I used six.

Pour your reserved crumbs down in the middle of the Peeps. Then, put your brown sugar down in there too. You will use ¼ cup brown sugar. Pat it down just a bit to help stabilize the bunnies.

Now, pour your M&Ms (about 1c.) on top of the sugar. They should come pretty close to the top of the jar.

Seriously now, how cute is this???

You need to send a recipe with the jar. I mean, you could just sit down with a spoon and this jar and live a happy life. Here is what this recipe card says:

Empty jar contents into bowl. Cut bunnies into small pieces. Mix back into bowl. Melt 1 stick of butter. Add 1 ½ teaspoons vanilla. Pour into dry ingredients and mix well. Press into greased 9 inch pan. Bake at 350 degrees for 15 minutes.

What I have to say about Purex Complete Crystals Softener:

On a scale of 1-10 (10 being the BEST), I would give this product a 9. Let me explain. Nothing is perfect, right? Well, this stuff is pretty close! I tried using it on both a load of clothes, and a load of towels (which to me are really the true test). The first load was the clothes, they were soft as ever, even the jeans...and smelled great...just fresh though, not like perfume or a field of flowers. First I want to thank you for following 25 Hours A Day on Facebook! It is so great to have you here. You bring me smiles!

This blog started a while back when I was a full-time working mom. At that point I didn't have much thoughts of it becoming much more than something for me to pass on deals to my family out of state. So after a couple of months of that, I found myself laid off. WOW, that hit like a tons of bricks. Monday is not my "normal" day to do my Walgreen's shopping...but after today it just might have to change! Due to mileage and saving money on gas I don't usually get to go to Walgreen's until Friday's, by then most things are pretty picked over or gone. GOAL! Cupcakes

My husband has coached our baby girl's soccer teams since she was just 4 years old. Which ends up making me the "planner". This is a great thing, because that's what I like to do. Anyway, last season I decided to do something I had never done before. I planned a party at a local indoor kids play place (no biggie), but I also provided homemade cupcakes...not the usual store bought ones. With a little insight from a good friend who makes designer cakes and cupcakes for a living, I think I did pretty good. The kids gobbled them up like crazy, I was convinced they tasted as great as they looked! :-)

New Year...New Ideas...

Here it is...the 10th day of 2011. WOW...where did 2010 go? For me personally, I am ready for a new year as 2010 was in some respects a rough year. I started this blog the early part of 2010 with all the intentions or posting at least once if not several times per day. I struggled with that idea since I was at the time a full-time mom as well as a full-time employee. I also suffered an auto accident in July of 2009 which sent me to so many appointments I can't keep count. I am still dealing with that. However, in August of 2010 I was laid off from my job. At first it seemed like a huge loss but after some reflection of my own and talking it over with my husband I realized that the world was in fact not coming to an end! I miss my coworkers of course, but I do not miss the time I spent away from my family and the time I lost being able to do the things I love. I have been learning so many new ways to make our family able to live on just one income, hubby's. In the long run the layoff has benefited me greatly, in my opinion.

So here we are, 2011...WOW! Oops, I said that already didn't I? hehe Anyway, I am not a believer of New Years resolutions...but I do believe greatly in having goals. So this year it is my personal goal to see that this blog flourishes with ideas, deals, etc. I would love to hear some ideas that you all might be interested in knowing more about. So please if you have something in mind and just don't have the time to research or ask people about, send me a message and I will do my best. If I just don't know or can't find an answer...believe me, I will be the first to admit to it. Some ideas I have for 2011 just off the top of my head are: Making my own laundry soap. Organic home cleaners. Checking our some new recipes. Time organization. Home organization. Home DIY projects, etc. These are just a few of my ideas, so please let me know if you have more...I am open to most anything!

My biggest goal is just to see my followers grow. I would love to start some product giveaways and contests but in order to do that I need to get this blog to grow! OK, so I was doing some research over the weekend...and if that is not enough to make you wonder about this blog...then I just don't know what will. Anyway, as some of you know my baby girl will be starting Kindergarten this fall (sniff sniff) and after talking she decided that she wants to take her own lunch to school. The Easiest Apple Pie Recipe EVER!!!

I found the most amazing recipe on Money Saving Mom's Blog and upon trying it for myself, confirmed that it was as tasty as it looked! The whole family enjoyed this thing, even the picky 5 year old! Its called Slab Apple Pie. This "pie" has easy peasy written all over it:

1. Super simple to throw together in a pinch. No rolling dough like the conventional apple pies.
2. It freezes great, so if you just want to put it together and bake later for a fresh out of the oven desert, then this is the recipe for you!

Slab Apple Pie with Easy Crumb Top

Crust:

1 cup flour
1/2 cup butter or margarine, cut into chunks
1/2 teaspoon salt
1-2 Tablespoons cold water

In medium bowl, combine flour, 1/2 cup butter and salt with a pastry blender, or two knives held together. Kids can do this with a fork if that is easier. Work these ingredients together until they form pea-sized crumbs. Quickly stir in cold water and combine until a dough forms.

(Use as is in recipes that call for an unbaked pie shell. For other recipes you may pre-bake it for 10-15 minutes at 350 degrees until light golden brown. Cool completely before pouring in your filling.)

Filling:

6 apples, peeled, cored, and sliced
1/2 cup sugar
1 Tablespoon lemon juice
1 Tablespoon cinnamon

Topping:

1 cup flour
1/2 cup butter
1/2 cup brown sugar
1/2 cup chopped nuts

Preheat oven to 375°. Prepare pie crust according to directions and pat it into the bottom of a 9×13 pan. In large mixing bowl, combine apple slices, sugar, lemon juice and cinnamon. Spread in an even layer over crust. In food processor, combine flour, butter, and brown sugar, pulsing until coarse crumbs are formed, or in a large mixing bowl, combine these ingredients, cutting butter into sugar and flour with a pastry blender or two knives held together. Stir in nuts. Sprinkle crumb top over apple layer.* Bake for 45 minutes to an hour or until filling bubbles. Cool completely.

If preparing ahead of time to freeze. Wrap with foil and label at the *. Then, when ready to serve, bake frozen pie at 425° for 15 minutes. Reduce heat to 375° and continue baking as directed.

Does anyone else ever feel like they need more hours in the day, more days in the week, and more weeks in the year? I am a wife, the mother of 4 children (that's a whole other blog) and a full-time professional. I need more of all of the above! I recently (about 4 months ago) stumbled upon a blog that really gave me a new mindset as to our financial situation. I realized that with little work involved I could save us tons buy just clipping coupons and being more frugal in general. I am becoming more aware of just how wasteful we have been (food, etc.). At first this venture was one of my own, but it is beginning to spread to my family and those closest to me as well (friends, co-workers, etc.). I want to apologize up front for not being the greatest writer, but I will get you the facts. I plan to update at least daily if not several times daily with deals I have found, recipes that I love (or really want to try), ramblings about my family or friends, pictures (not professional) and just anything else I find interesting or think others might like. Please feel free to comment on my posts...I love to see other points of view and want to know what you like to read about. Plus, it will be nice just to know that someone is reading...hehe. I am sitting here on the love seat with my hubby on Valentine's Day as I write the first blog of many many to come...I hope you will join me for what is sure to be a wild and crazy ride.
